Recipe Description


- 1lb. whole wheat pasta
- 1 cup milk (1% or skim)
- 1 lb. low-fat shredded cheddar cheese
- ½ head cauliflower florets
- ¼ cup low-fat parmesan cheese
- 1 Tbsp chopped parsley
- Salt and pepper to taste


• Bring water to boil and cook pasta according to package.
• Cook cauliflower until soft and transfer to a blender to puree.
• In a medium-sized pan, transfer pasta and pour cauliflower puree over pasta.
• Stir in milk and cheese until cheese is melted; then season to taste.
• Sprinkle with parsley.
• Serve immediately

Makes 8 servings.
