Recipe Description

  • penne8 oz whole-wheat penne
  • ¼ cup broccoli
  • 1 medium carrots, chopped
  • ¼ cup peas
  • ¼ cup yellow pepper
  • ¼ cup tomato, chopped
  • ¼ cup parmesan cheese
  • 1 Tbsp olive oil or for more flavor red wine vinegar

Directions:

  1. Cook pasta for about 5 minutes, then add the broccoli, carrots and peas to boiling water and cook an additional 4-5 minutes.
  2. Drain pasta and veggies.
  3. Top with tomatoes, olive oil and parmesan cheese
