Recipe Description

salad_pastaA high protein, high fiber salad to serve hot or cold.  Perfect for a main meal or as a side to any entree.


  • 2 cups whole grain rotini pasta
  • 2 celery stalks, finely chopped
  • ½ red onion, diced
  • 1 cup cherry tomatoes, cut in half
  • ½ cup red, yellow, orange or green bell pepper, diced
  • Your favorite low fat dressing: Italian, Greek, vinaigrette, etc.


  • Boil the pasta according to package directions. Drain and rinse under cold water.
  • Stir in approximately ½ cup dressing. Stir to coat.
  • Fold in chopped veggies.
  • Refrigerate until ready to serve. Add more dressing before serving if needed.
