Banana Bread

Ingredients - 1 ¼ teaspoon baking powder - ½ teaspoon baking soda - ½ teaspoon ground cinnamon - 1/8 teaspoon salt - 2 slightly beaten egg whites - 1 cup mashed banana - ¾ cup sugar - ¼ cup cooking oil - non-stick cooking spray coating |

Method 1. In a medium mixing bowl stir together flour, baking powder, baking soda, cinnamon, and salt 2. In a large mixing bowl stir together egg whites, banana, sugar, and oil. Stir flour mixture into banana mixture just till moistened. 3. Spray an 8x4x2 inch loaf pan with nonstick spray coating. Spread batter in prepared pan. Bake in a 350 degree oven for 45-50 minutes or till a toothpick inserted near the center comes out clean. 4. Cool bread in the pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store overnight. Makes 1 loaf. (16 servings) |

Pancakes

Ingredients - 1 ¼ teaspoon baking powder - ½ teaspoon baking soda - ½ teaspoon ground cinnamon - 1/8 teaspoon salt - 2 slightly beaten egg whites - 1 cup mashed banana - ¾ cup sugar - ¼ cup cooking oil - non-stick cooking spray coating

Method Set the oven to 425 degrees. Put the butter in the small bar pan and spread it over the bottom of the pan using a paper towel. Put baking mix into bowl. Add the milk and the egg. Whisk just until the large lumps disappear. Batter should be lumpy. Pour the batter into the pan, and then sprinkle the blueberries over the batter. Bake the pancake for 13-15 minutes or until the top is light golden brown. Carefully remove the pan from the oven using oven mitts. Sprinkle powdered sugar over the top of the pancake. Enjoy with some light maple syrup

Egg Omelette

Ingredients - 2 eggs (or 4 egg whites/egg substitutes) - salt and pepper - 2 tablespoons grated cheese (2% cheddar or part-skim mozzarella) - non-stick cooking spray - 2 teaspoons butter

Method 1. Whisk the eggs in a metal bowl with the salt and pepper 2. Heat pan over medium heat until warm and then spray with non-stick cooking spray 3. Add egg to pan 4. When the eggs begins to set, lift them and let the uncooked egg run to the bottom 5. Loosen the egg from the bottom of the pan. Tile the pan so theomelet is up on the left side of the omelet pan. Sprinkle the cheese down the center of the omelet. 6. Fold the right third of the omelet over the filled center. Tilt the pan and align the left edge of the pan with the center of the serving plate. Quickly flip the omelet out and over on itself. Serve. Also add: sautéed onion, diced ham, crumbled, cooked bacon, sautéed mushrooms, tomatoes, salsa, diced potatoes

Method Combine everything but the dry pancake mix; mix well. Add dry pancake mix and stir until batter is blended, but slightly lumpy. Put batter into a squeeze bottle and pour into shapes onto non-stick hot griddle. Flip pancakes over once browned. Serve with fruit sauce or decorate with fruit.
Recipe for dry pancake mix:
4 cups whole wheat flour
Mix thoroughly. Store in airtight container in cool dry place. Makes 6 cups pancake mix. Each batter recipe makes about 20 pancakes depending on their sizes. |
