A Summer Delight

Ingredients

- 1 commercial angel food cake
- 1 quart lime sherbet, softened
- 1 quart lemon sherbet, softened
- 1 (16 oz) container frozen whipped topping, thawed in refrigerator

 

Method

Sliced cake horizontally into 3 layers, place each later on a plate. Spread lime sherbet on 1 cake layer, and freeze. Spread lime sherbet on 1 cake layer and freeze. Place lemon layer on top of lime layer, and top with remaining cake layer. Spread whipped topping on top and sides of cake. Freeze. Once completely frozen, wrap tightly in aluminum foil until ready to serve. Slice to serve.

EASY, CAN DO CHOCOLATE CAKE

Ingredients

 

- 1½ cup - whole wheat flour
- ½ cup - sugar
- ½ cup - unsweetened cocoa powder
- 1 teaspoon - baking soda
- ½ teaspoon - salt
- 1 cup – non fat milk
- ½ cup applesauce
- 1 egg
- ¼ cup - canola oil
- 1 tablespoon - vinegar
- 1 tablespoon - vanilla extract

Method

 

1. Preheat oven to 350 degrees
2. Combine all cake ingredients in a mixing bowl.
3. Stir until smooth.
4. Pour into greased and floured 8 inch cake pan or lined cupcake pan (makes 16 cupcakes)
5. Bake cupcakes 14-16 minutes or full cake 25-30 minutes
6. Cool on a wire rack and enjoy!

Apple Cake

Ingredients

 

- ¾ cup granulated sugar (½ cup granulated sugar)
- 1 ½ eggs
- ½ cup vegetable oil (½ cup applesauce)
- 1 cup flour
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- 1/8 teaspoon salt
- ½ cup chopped nuts
- 1 cup chopped pared apples

Method

 

1. Preheat oven to 350 degrees
2. Beat together sugar, eggs, and oil until blended. Combine flour, baking soda, cinnamon, and salt, and add to wet ingredients. Fold in nuts and apples.
3. Spray a 9x9 inch baking pan with nonstick cooking spray or grease and pour in the batter.
4. Bake for 30 minutes, or until toothpick inserted near the center comes out clean.
5. Cool and dust with confectioner’s sugar

 

Ice Cream Fruit Delight

Ingredients

- ¾ cup cut up fresh fruit (strawberries, bananas, apples, blueberries, raspberries, pears, or grapes)
- ½ cup of non-fat or 1% fat vanilla yogurt
- 1 teaspoon granola
- 1 teaspoon honey (optional)
- 1 ice cream cone

 

 

Method

In cone, place the cut up fruit. Then place spoon in the yogurt. Sprinkle with honey then yogurt. Makes 1 serving.
